This week’s Whip It Up theme is “spicy”. Normally when opting for Mexican-inspired dishes, we turn to Mexican lasagna,vegetarian chili, or tex-mex pasta. But Whip It Up calls for new recipes, so Tamale Pie it was!
Tamale Pie
Ingredients:
- 1 pound soy crumbles or ground beef
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 clove garlic, minced
- 1 green bell pepper, chopped
- 2 cans diced tomatoes
- 1 can whole kernel corn
- 1 teaspoon salt
- 1 1/2 teaspoons chili powder
- 1/4 teaspoon pepper
- 1 can diced green chilies
- 1 package cornbread mix
- 1 egg
- 1 1/3 cups buttermilk
- 6 tablespoons butter
Directions:
- Preheat oven to 400F.
- In a large skillet over medium heat, brown the beef in oil. Add onion, garlic, and bell pepper, cook for 2 minutes, until just tender. Stir in tomoatoes, corn, and seasonings; simmer for 5 minutes longer. Pour into a 13x9-inch baking pan.
- Prepare cornbread batter using egg, buttermilk, and butter. Mix drained green chilies into batter. Carefully spoon over top of beef mixture.
- Bake 15 to 20 minutes until cornbread is lightly brown and filling is bubbling.

I may have to try this when fall comes knocking. I've been looking for some new casseroley type dishes for a while.
I love being able to just pop it in the oven and know we can eat for a good three days on one dish.
That looks really good and I can very easily make it gluten free! Mr. Bean has been on a bit of a corn bread muffin making stint (so good!), so it'll be tasty to be able to use it in another dish.

I have been meaning to try tamale pie. I'm going to keep this in mind for a cool day!
